What do I need to know about Angus beef cattle?

Most people know about Angus beef cattle today because of it’s growing popularity in restaurants. The reason Angus has become so popular with chefs and restaurants is because the cattle naturally have more meat than other breeds and have well-distributed marbling of fat in the meat.

What is marbling?

Marbling is the fine flecks of fat that are found within the muscle. The more marbling there is within a cut of meat the juicier and more flavorful it will be.

Why do Easton View Angus cattle have superior marbling?

Our breeding program utilizes artificial insemination to ensure the best available genetics for growth and carcass merit. One of the desired genetic traits we target is marbling. We also raise our cattle on a strict vegetarian diet.

What do you feed your Cattle?

Everything about our Angus beef cattle is all natural. Our herd is pasture raised and only given natural feeds such as farm-raised hay, corn silage, and haylage.

Do you process your own beef?

No. All of our cattle are processed locally by Eagle Bridge Custom Meats, a family-owned butcher shop. All meat is USDA inspected, vacuum packed, and frozen to preserve freshness and taste.

Our primal portions are as follows: half beef yields four pieces; whole beef yields eight pieces. Easton View Angus provides restaurants and clients across the Northeast with regional access to primal and packaged black Angus beef. In addition to week pick-ups available at Eagle Bridge Custom Meats, we deliver our beef across New York State and throughout New England.

What is the difference between primal and packaged?

Primal is fresh. Packaged is frozen.
